Umesu is a byproduct of making umeboshi, salt-cured “ume” plum, which has been enjoyed in Japan for centuries. The plum extract from the curing stone fruit tastes tangy and salty. Fukami’s Organic Umesu’s only two ingredients are the organic Nanko ume plums grown by the Fukami Family, the fourth-generation farm in Wakayama Prefecture, and sea salt. The golden colored liquid is a pure extract from ume plums and is obtained after a 6-months long filtration process with no water added; because of this, it concentrates the umami and the nutritional components that include calcium, magnesium, citric acid, malic acid, and polyphenols.
