The brewery specializes in a conventional method that naturally brews vinegar using local water and slowly ages it over a long period. This results in a taste characterized by a mild sourness and rich umami. With their house-made organic rice vinegar as its base, Okonomiyaki Sauce also features an abundance of vegetables and fruits—including tomatoes, apples, and onions—all grown by contract farmers in Japan. These quality ingredients and their time-honored production methods result in the sauce’s superior flavor—elegantly profound, fruity, and packed with umami.
